Anniversary Enchiladas!

Last week, Dan and I celebrated our 14 year anniversary. We made enchiladas to celebrate.



I went semi-homemade with these, 'cause I really wanted to get to the real celebration, if you know what I mean.

I used store bought corn tortillas and enchilada sauce. I stuffed half of the tortillas with a mixture of pinto beans and vegan cream cheese. The other half were stuffed with a mixture of SOYRIZO and vegan cream cheese. I placed the enchiladas, seam side down, in a glass baking dish and poured the sauce over them. I baked them at 350, covered, for 35 minutes, and then uncovered for 15 more minutes. I topped them with Cozy Inside Nacho Cheezy Sauce, vegan sour cream, guacamole and olives. Garnished with cilantro. Yum.

I scream, you scream...

Look what I got!

So, of course, I had to make this:


Espresso Chocolate Chip Cake and Kahlua Ice Cream Sundae
For the cake I used this recipe.
For the Kahlua Ice Cream:
Ingredients
2 cups soy vanilla creamer
2 cupos vanilla soy milk
1 cup Kahlua
1 cup sugar
2 tbsp Instant Clear Jel
Directions
Dissolve the Instant Clear Jel into 1/4 cup of the soy milk. Mix all ingredients together and follow the directions on YOUR ice cream maker. If you don't have an ice cream maker, that's okay, follow the directions HERE ignoring the recipe they give. Note that alcohol does not freeze, so even if you put this in the freezer for weeks, it remains perfectly scoopable!

100 Foods and Environmentalist Should Never Eat

Kelly Sonora sent me this article on 100 foods an Environmentalist should never eat. Although the list does provide that a vegan and/or vegetarian lifestyle is certainly better for the environment, it also provides nothing left to eat! Seriously. If I follwed these rules, I wouldn't be able to eat anything at all! Anywho, it is an interesting read.

Carmelized Onion Burger with Cheater Mac & Cheeze

Cookies & Cakes!

I was given the task of creating "culinary delights" for a fundraiser the other night. I decided on cookies and cakes. Who doesn't love cookies and cakes? I made Lemon Poppyseed Cakes, Espresso Chocolate Chip Cakes, and Cherry Oatmeal Chocolate Chip Cookies.

Here's the recipe for the cookies:

Cherry Oatmeal Chocolate Chip Cookies
Ingredients (makes 2 dozen)
Wet Ingredients
1 cup margarine, softened
3/4 cup sugar
3/4 cup brown sugar
1/4 cup agave nectar
6 oz vanilla soy yogurt
1 tsp vanilla
Dry Ingredients
1 cup all purpose flour
1 cup coconut flour (Bob's Red Mill makes this, and it is AMAZING!)
1 cup dry quick cooking oats
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Add Ins
1 cup dried cherries
1 cup chocolate chips
1/2 cup shredded coconut

Directions
Preheat oven to 350. In a large mixing bowl, mix together all wet ingredients. In a seperate bowl mix together all dry ingredients. Add dry to wet and mix well. Fold in the add ins. Form into balls using about 1/3 cup of dough per ball, slightly flatten and place on a cookie sheet lined with parchment, or a silicone mat, about 2 inches a part. I get about 8 per sheet) bake for 12-15 minutes, or until lightly browned. Allow to cool completely before removing from cookie sheet.
